The name Mahi-Mahi comes from the Hawaiian word for, “very strong” and refers to the fish’s powerful swimming abilities. These fish can reach up to speeds of 50 mph! They can grow up to 7 feet and weigh up to 88 lbs, however they are typically found between the 15-40 lb range. Mahi-Mahi has a mild, sweet flesh that looks pinkish but will turn white as it cooks. It is rather lean, firm and compact (not flaky), but it is also delicate, moist and flavorful. The “fishy” flavor is described as stronger than halibut but milder than swordfish.
