These are what are commonly known as Beeliners. Other names include, Night Snapper, Clubhead Snapper and Brian’s red fish. Beeliners can grow up to 2 feet long and weigh up to 7 pounds. These fish have a mild, slightly sweet flavor and delicate texture that cooks up firm and flaky. This fish pairs well with flavors such as ginger, cilantro and soy sauce. Recipes calling for steamed, baked or sauteed are favorable for this fish. Vermillion is similar to Red snapper in taste so it’s perfect for people who don’t like fish that’s oily or, “fishy.”
